Grilled Portobello Burgers with Roasted Garlic Aioli

Roasted Garlic Aioli
1 head garlic
1 1/2 cups of good-quality mayonnaise
salt and freshly ground black pepper

Trim off top 1/4 of the garlic head. Place on a piece of foil, drizzle lightly with olive oil, then wrap tightly. Roast at 350° for about an hour, or until very soft. Let cool, then squeeze out the garlic cloves. Mash into a fine paste and mix with mayonnaise. Season to taste with salt and pepper. Cover and refrigerate until ready to use.

Grilled Portobello Burgers
4 whole portobello mushrooms
5 to 6 Tbsp olive oil
salt and pepper to season
4 good quality hamburger buns or Ciabatta rolls, split


Clean, preheat, and oil the grill on medium-high heat. 

Generously brush the cut sides of the buns with olive oil. Place the buns, cut side down, on the grill and cook for about 30 to 40 seconds. Remove and set aside. 

Generously brush the portobellos, one at a time, with olive oil and immediately season with salt and pepper, before brushing the next portobello.

Place the portobellos on the grill and cook for about 2 minutes. Turn the portobellos over and cook another 2 minutes, or until the mushrooms are soft to the touch. Remove and place on one side of the buns. Generously spread the other sides of the buns with the aioli and place them on the portobello. Serve immediately.
