Cauliflower Fried Rice

CAULIFLOWER FRIED RICE

Today, you can purchase all types of prepped vegetables in the supermarket. Although it is easy to make at home, grated cauliflower, also known as cauliflower rice, is a new addition to the freezer section, and can be purchased in most stores.

3 Tbsp avocado oil, divided
2 eggs, beaten
½ head cauliflower, grated
1 carrot, grated
3-4 garlic cloves, minced
1/2 cup onion, diced
1/2 cup frozen peas
3 Tbsp Tamari (gluten-free soy sauce)


Heat a small non-stick skillet on medium heat. When hot, add 1 Tbsp. oil, then add the eggs. Quickly scramble and when just set, remove and let cool, then chop.

Heat a large skillet on high heat. When hot, add the remaining 2 Tbsp. oil then the cauliflower and the carrots. Cook for about 2 minutes, and add the onion and garlic. Cook for 2-3 more minutes,

or until the onions become soft and transparent. Stir in the peas, eggs, and tamari and cook for 1-2 minutes until heated through. Serve immediately. Serves 4 as a side dish.
